This Ayurvedic Chickpea Salad is designed to be just that – a perfect, satisfying lunch that nourishes without overwhelming your digestive fire.

Chickpeas (garbanzo beans) are a fantastic Ayurvedic ingredient. They are grounding (good for Vata), relatively cooling (good for Pitta), and a good source of protein and fiber, making them balancing for most doshas when prepared properly.

Ingredients:

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup cucumber, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely minced (or soak in cold water for 10 mins to reduce pungency)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • For the Dressing:
  • 2 tbsp fresh lime juice (cooling and aids digestion)
  • 1 tbsp olive oil(or a cooling oil like coconut oil in liquid form)
  • 1/2 tsp ground cumin (aids digestion without excess heat)
  • 1/4 tsp ground coriander (cooling and supports digestion)
  • Pinch of black pepper
  • Pinch of sea salt
  • (Optional: 1/4 tsp grated fresh ginger for Vata/Kapha, omit for very high Pitta)

Instructions:

  1. In a medium bowl, lightly mash about half of the chickpeas with a fork. Leave the other half whole for texture.
  2. Add the diced cucumber, celery, red onion, fresh cilantro, and fresh mint to the bowl with the chickpeas.
  3. In a small bowl, whisk together all the dressing ingredients: lime juice, olive oil, cumin, coriander, black pepper, and sea salt. Add optional ginger if using.
  4. Pour the dressing over the chickpea mixture and stir gently to combine everything well.
  5. Taste and adjust seasoning if needed.
  6. Serve immediately, or chill for 30 minutes for enhanced flavor.
